How to Make a Healthy Vegetarian Dinner

Being a vegetarian often means eating a lot of carbohydrates, including bread, pasta and anything else that will act as a filler. Unfortunately these can spike the blood sugar and cause weight gain, which is why they are best when eaten in moderation.

If you still eat dairy and want a healthy vegetarian dinner to make, then consider spinach burgers! These are great for you and taste really good.


– 15 oz can chickpeas (drained)
– 1 tbsp powdered garlic
– 1/4 cup finely chopped red onion
– 1/2 cup shredded cheese
– 3 cups frozen chopped spinach
– 2 tbsp low sodium teriyaki sauce
– 1 egg
– 2 egg whites

First take your drained chickpeas and mash them up either by hand or with your food processor. They should come out to be a smooth consistency, although a few small chunks are perfectly fine. After this, set the chickpeas aside and warm up your spinach for around 2 minutes in the microwave. When this is done, let it cool for a few minutes before handling.

Next you will take a thick paper towel (layer a few on top of each other) and pour the spinach into it. Push out all the water that you can and then add in the spinach into the bowl with chickpeas. From here, measure out all of the rest of your ingredients and put them into that same bowl. Mix with a fork until everything is well combined and you will be ready to cook!

Heat up a pan with a little bit of olive oil and shape the spinach mixture into small patties. Then you will place the patties onto the frying pan and allow them to cook for around 4 minutes on each side. You can flatten these while you are cooking, as they will cook more quickly if you do.

These are great when served over corn, but they also taste great on salads or a number of other sides. The calorie count for these is also low, which means you won’t have to feel guilty about eating them! You can also substitute a number of spices for those in the recipe, just in case you don’t like one of them. A lot of people even keep out the cheese, but the eggs are definitely necessary.

Roasted Cauliflower Recipe


– 1 head cauliflower
– 1/4 cup minced garlic
– 2 tbsp olive oil

Wash the head of cauliflower and break it into small florets. After this, put the garlic and olive oil into a large plastic bag that zips at the top. The cauliflower florets will need to go into the bag next, before it’s completely sealed. Push the cauliflower around so that it soaks up the oil as well as the garlic. Once finished, put into a casserole dish and bake in the oven at 425 for 20 minutes covered and 20 minutes uncovered.

This is a great side to pair with the spinach burgers because it’s flavorful, healthy and low in calories. If you want to add some additional flavor, then sprinkle some powdered ranch dressing mix over it. This is healthier than regular ranch dressing and a little bit of it adds a whole lot of flavor.
